Alishan Sustainable Coffee
We voluntarily provide guidance to Alishan coffee farmers and work together to produce local Alishan sustainable coffee.
We aim to enhance Alishan coffee's flavor, making it a highlight on the world coffee map.
We hope to preserve the beauty of Alishan coffee sustainably for future generations.
我們將到阿里山咖啡園,
親身參與咖啡從田園到餐桌的過程,
並嚴格執行整體改善計畫。
From Farm to Table
We will visit the Alishan coffee farm,
personally participate in the coffee process,
and strictly implement the overall improvement plan.
以更為友善環境的生態種植,
到只採摘全紅的咖啡果實Red Berry Only,
和更為細緻和科學的後端咖啡果實處理。
最後我們將SCA系統化的實戰訓練,導入整個咖啡後端的製作,
包含科學儀器輔佐的咖啡豆烘焙,如何分辨咖啡風味的咖啡感官杯測,
並以科學理論沖煮淬取美味咖啡,
最後輔導咖啡農取得,SCA國際精品咖啡師認證。
Starting with educational training,
focusing on eco-friendly and sustainable coffee cultivation,
we adopt the "Red Berry Only" approach,
picking only fully red coffee cherries.
This is followed by more meticulous and scientific post-harvest processing of the coffee cherries.
Finally, we integrate practical SCA (Specialty Coffee Association)
systematized training into the entire post-harvest coffee production process.
This includes coffee bean roasting aided by scientific instruments, sensory coffee cupping to distinguish coffee flavors,
and brewing delicious coffee based on scientific principles.
We also assist coffee farmers in obtaining the SCA International Specialty Coffee Certification.
在永續咖啡的發展路上,
每跨出一步,
都必須額外付出更多勞力、努力和財力,
但是每跨出一步,
也代表著我們台灣更美好一點點。
永續發展的第一步,
就是讓咖啡農有經濟能力執行永續咖啡,
也唯有如此,
永續理念才能永續發展下去,
這樣我們才能留給下一代更完整美好的未來!
